Homemade Keto Eggs Benny

Well, I wasn't expecting greatness so I wasn't too disappointed with this attempt at Keto Eggs Benny. I scoped out a few recipes via Pinterest before deciding on this one from Ditch the Carbs.

The recipe was really well written and the steps were laid out perfectly. What could go wrong?

The bread of course. Now, I've had some really nice keto attempts at breads, whether it be rolls or pizza dough, but this one was a complete fail for me. Maybe it's because I didn't mix the baking powder into the almond flour before putting the egg whites in... We'll never know. What I did know was I had to find a different recipe for that step in the recipe. I chose this recipe from Kitchn and after toasting the cooked "bun" in my frying pan with a little bit of oil... It actually looked pretty tasty! The taste was pretty good but the texture was just alright. I think I'll find a different recipe for my English muffin next time.

By this time my eggs had already cooked and I had released the pressure and took the lid off. I loved the concept of poaching my eggs in my pressure pot, but I don't have an "Instapot" so maybe that's why my eggs came out hard poached. If you've read any of my other eggs benny posts, you'll know that I love my poached eggs runny. So again, fail (but I blame the pot, not the idea).

So I have a few hollandaise (fat) sauce recipes pinned on Pinterest, but I thought I'd give the one in the recipe a shot. I've heard of blender hollandaise before so I figured this would be easy and turn out. *sigh* wrong again. Maybe I should've used my food processor instead of my Bullet, I'm not sure. I blended two egg yolks with 1/2tbsp of lemon juice first, heated my butter in my microwave for a minute and it was bubbling like crazy when I took it out.. Perfect. Quickly dumped it into my bullet cup and gave it a swirl before putting the lid on and blending it some more. It looked super smooth, so I thought it worked, but it kept separating. Maybe it needed more egg yolks or less butter? Not sure. The taste was very buttery.. Like what I'd dip some crab or lobster in, mmm. BUT, the end result was not perfect fat sauce. Will try a different recipe next time!


I think the end result looked nice (I was lazy and put sliced mozzarella instead of cooking some bacon lol), and yes I ate all of it, but this is definitely not the BEST keto eggs benny recipe in the world. So I'll try again and again... and again, until I find a keto recipe that I love. Until then, I might use regular eggs benny as a yummy dish for a carb loading day 😉
